Preparing your Kitchen for Holiday Entertaining

It’s the time of year when many of us have family visiting and special get-togethers that involve food. You can save a lot of money by having holiday parties at home rather than in a restaurant and it is usually more fun too. I have friends coming for dinner this month as well as a neighborhood cookie swap at my house.

Scrambled Egg Muffins

I often have overnight company around the holidays and many times I am looking for tasty, simple dishes I can serve hot from the oven with toast, fruit and milk. Scrambled egg muffins work for guests and they are very versatile. I have used a lot of different veggies such as mushrooms, tomatoes, and spinach.  I have even added ham or Canadian bacon.  If you’re in a real hurry, you can skip the muffin pan all together and make it in a 8 x 8-inch pan. It will take about 20 minutes in an 8 x 8 pan. To be sure, bake to an internal temperature of 160 degrees.

Eating too much sodium can cause health problems, including high blood pressure and heart disease. Most of us consume around 3,400 milligrams of sodium daily—more than double the 1500 milligrams recommended by the American Heart Association and well above the 2,300 milligrams the CDC recommends for the general population. More than 75% of our sodium comes from processed and restaurant foods. Putting down the salt shaker isn’t enough. Be sure to check the Nutrition Facts label on packages—keep the sodium content below 5% whenever possible. Or, even better, cook more meals at home and be careful about the Salty Six:

Concerns about sodium and its link to high blood pressure and heart disease are most commonly found among people who are middle age and older. However, according to the CDC, about 90% of US children ages 6-18 eat too much sodium daily and 1 in 6 children has high blood pressure (source).
