Last week Christine started off the month of March sharing about one of her favorite recipes, Scrambled Egg Skillet. As we go through this month, we are each going to share what dinner looks like in our homes and some recipes we are enjoying right now.
Over the past couple of years, my children have become more and more involved in after-school activities. This has been a fun experience for all of us, but it leaves less time for the family meals that are so important to us. Since I do not want family meal time to go away, I have switched to making dinners with little prep time. This makes it easier to come home from an activity and get a meal on the table, or have something quick to eat before we leave for later activities. I have two different strategies for these quick meals:
I prepare a double or triple batch of one or two time-intensive recipes over the weekend or on a night when we are not busy. Then we re-heat what we need on nights when we are tight for time. Some recipes that are popular in our home are:

One last thing I do to get meals on the table quickly is to keep canned fruit, frozen vegetables, and cut fresh vegetables on hand. These make quick and easy side dishes for any meal. As we share about our dinners at home this month, reach out and let us know some strategies that work for you.
