Quick Meals for a Relaxed Summer
This week we are kicking off a new series all about our go-to meals for summer. In the summer I like to have more time outside looking after my plants and flowers and I tend to travel more often as well. I’ve shared before that cooking is something I really enjoy, but I also like to have quick meals that do not require much cooking so that I have time to relax and enjoy a slower pace.
Hydrate and Stretch this Summer!
Summer is in full swing and my kids are busy with sports camps and day camps. My son is doing a strength and conditioning camp and the first day after camp his legs were sore! I encouraged him to do some leg stretches to help loosen them up. I got to thinking there are lots of activities we do during the summer that might make our legs a bit sore. Going for hikes, riding bikes, playing sports, walking while sightseeing on vacation and more! A new physical activity video we have on Spend Smart. Eat Smart. that might be helpful when you have sore legs is our Lower Body Stretch. It can be done as a standalone stretch or done when the body is warmed up for a deeper stretch.
The Sandwich—Suitable for Royalty
Apparently, sandwiches were invented in the 18th century when the Earl of Sandwich asked for his meat to be served between slices of bread, to avoid interrupting a gambling game or getting his cards greasy. If the Earl were alive today he probably would have invented sandwiches so he could eat while driving, or to avoid getting his cell phone dirty!

Corn on the cob: A sure sign of Summer
There are many signs that summer is here including hot weather, full swimming pools, and sunlight until after 9 pm! Another sign is that sweet corn is starting to show up at the grocery stores, Farmers’ Markets, and street corners. We planted sweet corn on the farm I grew up on so seeing the sweet corn reminds me of my childhood. I’d spend a day or two in the kitchen with my mom, sister, and grandmas freezing sweet corn so we could enjoy eating it throughout the winter.
