
Egg prices are tough for everyone right now. We usually make breakfast food for supper on Wednesday nights. My children’s favorite is when we make smoothies, scrambled eggs, and toast. They each like to help with making one of the foods. They have to take turns making the smoothies because they all want to run the blender. Since egg prices have started going up, we have stopped making this family favorite meal, which is a bummer for everyone.
I also stopped baking for a few weeks so I could save the eggs we had for when we really needed them. Then, I was reminded by a co-worker that I do have options for baking without eggs. AnswerLine has a great video sharing a variety of foods you can substitute for eggs.
I already had a bag of chia seeds in my refrigerator, so that is what I have been using for my baking. One egg is equal to one tablespoon of chia seeds plus three tablespoons of water. I put the chia seeds and water in a small bowl and set a timer for six minutes. About halfway through, I stir the mixture. After six minutes, it creates a gel that can be used instead of an egg in your baking recipes.
I have used chia seeds instead of an egg in quick breads, such as our Banana Oatmeal Bread, and our Scones recipe. My family all liked the final products and my daughter even thought they were better than usual. I am hoping to try a cookie or brownie recipe later this week. If you do not like the texture of chia seeds, ground flax seeds are a good option too. I checked the prices at Wal-Mart, and I can currently buy a bag of chia seeds for $8.88 or a bag of ground flax seeds for $6.64. When I do the math, that is about $0.12 per “chia egg” or $0.05 per “flax egg” as compared to $0.50 (or more) per chicken egg. If you do not have a Wal-Mart, I have seen both chia and flax seeds at other grocery stores as well.
