It’s my turn to share the foods I enjoy that are also good sources of fiber! When our team decided to write this series, I reflected on where the fiber in my diet comes from. The answer was most of the usual suspects – fruits, vegetables, grains and beans. Instead of going into more detail about those foods, I figured I would share a routine that makes it easy for me to get enough fiber. My coworkers will laugh at the routine I’m choosing to share 😊.
I eat the same thing for lunch almost every day! My lunch is a big, high-fiber salad topped with protein. My salad usually includes spinach, cabbage, carrots and peppers. Then I will top it with other things that sound good that week. Sometimes I have onions, cucumbers, radishes, chickpeas, cheese, or tomatoes. I love it when I have crunchies like croutons, wonton strips or seeds. I also have different dressing based on which flavor sounds best that day. I have a serving or two of fruit on the side and that changes based on what sounds good to me and what is in season.
For the most part, I enjoy knowing my lunch will be tasty, filling, and give me good energy for the second half of my day. It makes my meal planning a bit easier and is one less decision to make. Admittedly, this routine is not going to appeal to everyone. Eating the same thing can get boring and when it does, I change it up. If you like the idea of making fewer food decisions and aren’t bothered by repetition, I hope you’ll consider choosing a lunch meal to have on repeat!
