Whole Meal Salad

This is our final week highlighting some of our Spend Smart. Eat Smart. salads, and, in my opinion, we saved the best for last. Whole Meal Salad is a hit at my house every time I serve it. My family loves this recipe because they each get to make their own perfect salad. The Whole Meal Salad recipe is written for one, but I easily adapt it for my family by setting all the ingredients out on the counter and letting each person choose what they would like. Earlier this summer, my youngest child separated all of the ingredients on his plate and then individually decorated each spinach leaf with his favorite toppings because he wanted every bite of his salad to be perfect.

Last week Justine shared a number of recipes that don’t require any chopping. This week I’d like to share some recipes that don’t require any cooking. Sometimes it’s nice to have a recipe that uses minimal equipment and no heat required!

Make Veggies the Star

Adults should eat an average of two to three cups of vegetables per day depending on age and sex. Does this sound like a lot to you? If you are balancing a busy schedule, a tight grocery budget and often eating meals on the go, this may seem like a high bar to reach. I have found that making vegetables my main dish once per day helps me reach 2 ½ cups per day, which is the recommendation for me.
