We recently updated our Tuna Melt Sandwich recipe and I am sharing it with you today for our March recipe of the month. This is a good recipe when time is tight because the tuna salad mixes together quickly and the cook time is only about 10 minutes total.
This is a recipe I like to have as an option when I am on my own for a meal because it scales down easily. I usually buy the small (2.6 ounce) pouches of tuna, so I can make just one tuna melt. I stir the pouch of tuna together with slightly less than 1 tablespoon of mayo, and a sprinkle of ground black pepper, garlic powder, and onion powder (instead of the diced onion). I top it with a slice of tomato and either 2 tablespoons shredded cheese or a slice of cheese, depending on what I have on hand. I save the extra tomato as a topping for future sandwiches or salads. The baking instructions for one tuna melt are the same as those in the full recipe.
We often get questions about which of our recipes are easily scaled down when cooking for one or two. Here are a few others I scale back for myself:
- Vegetable Quesadillas
- Sausage and Vegetable Skillet
- Baked Potato with Cheesy Vegetables
- Broiled Salmon
An important tip to remember when scaling back recipes is to have a plan for what you will do with leftover ingredients. With tuna melts, I have to plan for using the leftover tomato and cheese in my future meals. Find the full Tuna Melt Sandwich recipe on our website.
Enjoy!
