No Chopping, No Problem!

Last week I shared our April recipe of the month – Coleslaw Pasta Salad. It is a unique salad recipe because it does not have any chopping, so a knife is not needed. This week I would like to share some other Spend Smart. Eat Smart. recipes that do not need a knife to prepare. Since I have already shared a salad, I have chosen recipes from other categories below.

AppetizerBlack Bean Salsa – Just stir together black beans, corn, and salsa to serve with chips as an easy appetizer. Or, use this recipe as a topping for baked potatoes, tacos, or a rice bowl.

Main DishBlack Bean Burgers – This is a popular meal for the newer cooks in my home to make. We just leave out the minced onion and replace it with 1 teaspoon of onion powder.

SoupCheesy Broccoli Soup – We like to make a version of this soup with shredded cheese (instead of sliced) every couple of weeks when the weather is cold. Using frozen broccoli or other frozen vegetables means there is no chopping.

Side DishCorn Bread – Corn bread is a frequent side dish in my home because it goes along with many different main dishes. As an added bonus, we like to eat the leftovers for a quick breakfast.

SnackEnergy Bites – Mix together the ingredients, form them into balls, and store them in an airtight container for a snack. If they will get eaten in a few days, store them in the refrigerator. If it will take longer to eat them, store them in the freezer.
