Ingredients

  • 8 ounces whole wheat pasta (elbows, penne, rotini)
  • 1 teaspoon oil (canola or vegetable)
  • 1 bag (14 ounces) coleslaw
  • 3/4 cup light mayonnaise
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons cider vinegar
  • 2 tablespoons white sugar
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon onion powder

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cool water. Place in a large bowl and stir in oil.
  2. Stir in coleslaw. Cover and store in the refrigerator until ready to serve.
  3. In a small bowl, mix together mayonnaise, Dijon mustard, cider vinegar, sugar, black pepper, and onion powder. Cover and store in the refrigerator until ready to serve.
  4. To serve, stir pasta mixture and dressing together until the pasta is coated with the dressing. Or, serve pasta mixture and dressing separately so people may add their desired amount of dressing to the salad.

Tips

Add ingredients to change the flavor and texture: Diced vegetables such as bell peppers, celery, or onions. Fruit such as chopped apples, halved grapes, or dried cranberries. Seeds such as pepitas or sunflower seed kernels.
