What Fruits and Veggies do You Like?

This past year, we have been asking people about their favorite seasonal produce. We are going to continue sharing this month, starting with my family. I decided to ask my three children what fruits and veggies they like to eat in the summertime. We are very lucky to have a small garden at our home and access to larger gardens at grandpa’s and grandma’s homes, which you will see reflected in their answers below.

Have you ever made homemade guacamole? I had not until I first made our July recipe of the month. I assumed I could not make it as well as a restaurant or the tubs of guacamole I bought from the store. I was both right and wrong. This recipe is certainly not as good as my favorite restaurant guacamole, but it is better than the tubs of guacamole from the store. The first time I made it, I liked it so much that I ate half of it for lunch one day and the other half the next day.

Katy’s Go-To Summer Meal

My family’s schedule is picking up now that summer is in full swing. Even though my kids are little (4.5 years & 10 months), I find that we are constantly on the go. Whether we are at the pool, a playground, or simply playing outside after naps, having quick dinners that don’t take a lot of time to prep and clean-up is a must!

“More Green Trees, please”

Broccoli is a staple vegetable in both the fridge and freezer at my house. My preschooler has always loved broccoli- especially if it is steamed or roasted. When she was younger, she would request broccoli with her meals by asking for the “tiny green trees”. Thankfully all of us enjoy broccoli so it is an easy request to fulfill. Below are a few ways that we include tiny green trees into our meals and snacks.

It’s Time for Asparagus!

It’s Spring! And that means asparagus is in season. I remember growing up on the farm and cutting wild asparagus in the ditch by our house. Now I buy it in the grocery store. My husband loves asparagus so he gets excited for me to make it when it’s in season. His favorite way to have it is roasted. I also like to grill it.

Even though we would like to roast, broil, and bake; sometimes we just do not have the time nor energy to set aside for it. This is when a microwave comes in handy. A microwave has great potential and can be used to do so much more than just heat up leftovers.
