“More Green Trees, please”

broccoli

Broccoli is a staple vegetable in both the fridge and freezer at my house. My preschooler has always loved broccoli- especially if it is steamed or roasted. When she was younger, she would request broccoli with her meals by asking for the “tiny green trees”. Thankfully all of us enjoy broccoli so it is an easy request to fulfill. Below are a few ways that we include tiny green trees into our meals and snacks.

  • Easy Roasted Vegetables– I love roasting broccoli as a side dish with other vegetables or even with sausage to make a sheet pan meal.
  • Cheesy Broccoli Soup– I enjoy freezing this soup to have on hand when someone at our house is feeling under the weather. Paired with crackers or crusty bread, broccoli cheese soup is a favorite comfort food at our house.
  • Scrambled Egg Muffins– If I have leftover broccoli from dinner the night before, I like to chop it up to use in these easy scrambled egg muffins for quick breakfasts during the week.
  • Vegetable Dip– With the weather getting nicer, we are eating a lot of our lunches outside or at the park. This dip is simple to make and goes great with fresh broccoli, peppers, and carrots for a tasty snack!

Leftover steamed and roasted broccoli are great additions to any recipe or dish. We even love adding broccoli to homemade pizza, pasta dishes, and salads.

Our youngest is becoming more adventurous with solid foods. Broccoli has been a great addition to incorporate into her diet as she begins trying new textures. So far, she seems to be enjoying the tiny green trees as much as her older sister. 😊

Cheers to adding “tiny green trees” into your meals or snacks this week!
