Summer’s Perfect Side, Topping, Sandwich…

Broiled Tomatoes

This month’s recipe is truly a jack of all trades. Broiled Tomatoes are so flexible, you can use them as the basis for a sandwich, sauce or appetizer. Here are some of the ways I have used this recipe.

  • Serve the tomatoes alongside slices of crusty bread as an appetizer.
  • Use these broiled tomatoes in a bacon, lettuce and tomato sandwich.
  • Add a broiled tomato to a grilled hamburger to make your own signature burger.
  • If you have leftovers, chop them up and add to cooked pasta.

This time of year, gardeners are often dealing with huge numbers of tomatoes and trying to find uses for all of them. This recipe may help you add some variety to your tomato dishes. Here are some additional ideas for making good use of your tomatoes and other garden produce.

  • Make a donation. Many food pantries will accept fresh produce. Contact one in your community to see if they could make use of extra veggies from your garden.
  • Freeze garden veggies. Here is a step by step guide.
  • Contact your county ISU Extension and Outreach office to ask about home food preservation classes called Preserve the Taste of Summer. You could build your skills this year to be prepared for home canning, drying and freezing next growing season.
