Ingredients

  • 2 large tomatoes
  • 3 teaspoons oil, divided (canola, olive)
  • 1/4 cup bread crumbs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 cup shredded cheese (mozzarella, parmesan)

Instructions

  1. Preheat oven to 350°F.
  2. Rinse tomatoes under cool running water. Pat dry. Cut into 1/2 inch slices or about 8 slices.
  3. Cover a baking sheet with foil. Place tomato slices on baking sheet.
  4. Drizzle 2 teaspoons oil over tomatoes.
  5. In a small bowl, stir together 1 teaspoon oil, bread crumbs, Italian seasoning, and garlic powder. Sprinkle over tomato slices.
  6. Sprinkle cheese over tomato slices, about 1 tablespoon cheese per tomato slice.
  7. Bake 8 to 10 minutes or until tomatoes are soft and cheese is melted.
  8. Set oven to broil. Broil tomatoes 1 to 2 minutes or until cheese is browned.

Tips

Tomatoes slice more easily with a serrated knife.

Use dried basil or dried oregano in place of the Italian seasoning.
