Pizza Made Easy

WHOLE WHEAT PIZZA CRUST

Whenever I get asked what my favorite foods are, pizza is at the top of my list with tacos being a close second. There are so many options for pizza that I could write it into my meal plan several times in one week and not get tired of eating it. When I have a hankering for a slice (or two!), especially for lunch, Pizza Boats are a quick way for me to satisfy that craving.

Pizza boats are a great way to use a variety of ingredients in your pantry and fridge. The recipe calls for English muffins or hot dog buns, but you can also use bagels or hamburger buns. I enjoy topping mine with leftover roasted vegetables as well as pepperoni or cooked sausage. I love trying different cheese combinations on my pizza, like feta and goat cheese, so making personal pizzas for myself allows me the flexibility to get more creative with the toppings I choose.

Pizza on a Potato and Flatbread Pizza are two easy recipes that don’t require a lot of time or ingredients and make for a tasty lunch or dinner. On dance nights for my preschooler, we often make pizza boats or flatbread pizza when we get home as a fast dinner option. This week I am planning to use mini bagels as our pizza crust and will top them with mozzarella cheese and leftover roasted mushrooms that I used for a dish we made over the weekend. My mouth is already watering thinking about our after-dance meal this week!
