I Have a Confession to Make

Last month I wrote a blog about how I plan my meals ahead and how easy it is. Well, I have a confession to make. The past couple of weeks I have not done a good job of planning meals. Between my son’s soccer practices and games and just wanting to be outside in the nice weather as much as I can, I haven’t been as committed to getting my meals planned. I feel like I’ve been in a rut making many of the same recipes for the last few months. Therefore, I am excited to have discovered a new resource from Utah State University that is all about making your own meals based on what you have on hand.

Snacks for the Pool

Summer is in full swing and my children love spending time at the swimming pool. My son really likes getting a treat at the pool snack bar. I let him get a treat every once in a while but I balance that by bringing our own snacks the other times. Depending on how often you go to the pool, the cost of getting treats can add up. And the options are not always very healthy. My son and daughter really need an afternoon snack, but if they are swimming actively in the hot sun, I don’t want to give them heavy foods. Here are some snacks I like to take from home.

Shopping for Seasonal Fruits and Vegetables

Fresh watermelon, cherries, and blueberries…sure signs that summer is here. My 22 month old daughter loves eating these summer fruits. I’m glad she likes them but oh boy does she create a sticky mess when she eats them; watermelon juice running down her chin, her hands sticky with cherries. The blueberries aren’t usually too messy, except when she drops one in her seat and sits on it!

Storing Fruits and Vegetables

Summer is here and that means many fruits and vegetables are now in season. I have recently started growing my own fruits and vegetables to try and cut back on grocery costs and I am quickly learning that I will have more than I know what to do with! I will have an abundance of berries so Yogurt Parfaits will be a staple breakfast before work and Mini Berry Pies will be a wonderful treat for dessert. Summer Bounty Salad is a great recipe to use up any vegetables you may have on hand as any vegetable can go into this and it will taste great.

Baking Bread like Grandma

I come from a family of cooks. I started cooking at a young age and continue to enjoy it today. A favorite memory I have is learning to make homemade whole wheat bread from my grandma. I remember her teaching me to knead the bread and then being patient to let it rise before cooking it. As a 4-Her I made my grandma’s bread for the county fair and got a purple ribbon. It went onto the state fair where it got a blue ribbon.

What Are ‘Ancient Grains’?

/>There is no official definition of ‘ancient grains’. However, the Whole Grains Council defines ancient grains loosely as grains that are largely unchanged over the last several hundred years. Therefore, modern wheat, which has been bred and changed over time, is not an ancient grain. Grains like quinoa, amaranth, Kamut®, spelt, farro, millet, and teff would be considered ancient grains.

This holiday causes me to reflect and be thankful for what I have. It also gets me thinking about what I take for granted on a daily basis that others would be grateful to have. Gifts from the Kitchen

With the holidays quickly approaching I’ve been making a list of who I need gifts for. I have to admit, some years I’m the person who is getting a gift right before I need it. However, this year I’m planning ahead because I’m excited to give my family and friends our Healthy and Homemade cookbook. On my dad’s side of the family we do a gift exchange among the adults. This year, I plan to take the Healthy and Homemade cookbook and tuck a grocery store gift card inside for the gift exchange.

Last week I wrote about food gifts I’m planning to give to family and friends. This got me to thinking about what gift ideas for me I could share with my family. As someone who enjoys spending time in the kitchen cooking, I looked around my kitchen to see what I needed. Here are a few ideas I came up with:

What’s In Season Now?

It’s that time of year when my son asks me to buy pomegranates when he sees them in the grocery store because he so enjoys eating pomegranate seeds. I think it might have something to do with whacking the fruit to get the seeds to fall out. My 2-year old daughter is now a fan of them also. They are quite tasty and fun to eat… if only the seeds were easier to get to! Here is a video that shows how to get them out without making a mess!

A Healthier Me in 2016: A Dietitian’s Goal

Are you curious what New Year’s goal a dietitian might set? Well, it may surprise you but my goal is to increase my vegetable intake by eating more vegetables for snacks. I eat vegetables daily, but mostly at lunch and supper. However, I don’t always get in the 2 ½ cups I need each day. The snacks I bring to work most often are fruit or whole grain crackers. These are perfectly healthy snacks that I will continue to eat but I will also swap out one a few times each week for vegetables. My SMART goal for 2016 is, ‘I will eat 1 cup of vegetables as a snack 3 times per week’. If you would like a reminder of what a SMART goal is, visit last week’s blog.

Meal Planning: Less Stress, More Money

Last year I wrote a blog on menu planning and mentioned that my son’s famous first words after we got home at night were, “I’m hungry.” Now that my daughter is two, I have two kiddos telling me this! Therefore, I find meal planning even more important so I can get a healthy meal on the table fast.  Since I find it so helpful, I’d like to share tips for successful meal planning again.
