This summer I’m enjoying yogurt parfaits for breakfast. My favorite combination is vanilla yogurt, granola, and a fresh, chopped peach. Our Spend Smart. Eat Smart. granola recipe works great in my parfaits. Here are a few things I like about this recipe:
- The ingredients are things I keep on hand so it’s easy for me to make the granola when I want.
- It gives you options for mix-ins so you can make different varieties of granola depending on what you like. My top choices are chia seeds and coconut. Once in a while, I also like using sunflower seeds.
- There are options to use different sweeteners including honey, maple syrup, or pancake syrup. My daughter doesn’t like honey, so I use maple syrup.
The recipe says to bake for 45 minutes to 1 hour, stirring every 15 to 20 minutes. I have found it is best to bake for 45 minutes and then check every 3-5 minutes until done to prevent burning. This recipe would be great to have on hand to use in yogurt parfaits when you need a quick breakfast before school or work this fall.
