What’s for Dinner at the Gatewood Household?

BEEF AND VEGETABLE STIR FRY

This week it’s my turn to share what we’re having for dinner at my house! I’m a big fan of having dishes that include multiple food groups. That means I don’t have to think of or make many side dishes. Some recipes that are often in the rotation at our house include Quick Pad Thai, Beef and Vegetable Stir Fry, and Pasta Fagioli Soup. Since all of these have vegetables, protein, and grains, a side of fruit and maybe a glass of milk are the only other things I need to serve.

One of my daughter’s favorite Spend Smart. Eat Smart. recipes is Quick Pad Thai. Since there is peanut butter in the sauce, she has renamed them Peanut Butter Noodles. One thing I do to speed up making this dish is keeping cut-up chicken breast in a plastic bag in the freezer. That way I don’t have to spend time cutting up the chicken but can just start cooking it.

Another go-to recipe for us is Beef and Vegetable Stir-Fry. You do have to let the meat set in the sauce for about 20 minutes before cooking but after that, it comes together quickly. I always use a bag of frozen stir fry vegetables when making this which is a time saver.

My family enjoys eating soup including our Pasta Fagioli recipe. It’s great to have in the colder months but my husband loves to eat soup year-round, so it might be on the menu during the warmer months as well.
