Our July recipe of the month is Chickpea Salad. This salad is ideal for these hot summer days with chickpeas, chopped vegetables, and a quick homemade dressing. The only problem is, I am not really a fan of this recipe. Like most people, there are foods I like and foods I do not like. Chickpeas are my least favorite type of bean and I only like mayo in certain recipes. Thankfully, my friend Christine loves this recipe and has been making it for many years. Below Christine shares her thoughts on Chickpea Salad.
A former coworker of mine called this recipe Chickpea Surprise as a joke because I brought it to work so often. This salad is a go-to lunch for me. It is a hearty alternative to a more conventional leafy green salad. I love how crunchy and filling it is. The ingredients needed for this salad are ones I often have on hand so it comes together easily. I can also make this salad ahead (keeping the mayo separate) and it stays fresh and crisp for a couple of days. This is a huge help to me when I need to make lunches ahead to take to work. You can also get creative with this salad. Try kale or mixed greens in place of the spinach or substitute some cucumbers in place of the celery. Swap out the mayo and seasonings for your favorite bottled or homemade dressing. You can really make it your own!
