Recipe of the Month – Beef Stew

Throughout 2025 our Spend Smart. Eat Smart. bloggers will be highlighting some of our favorite recipes from the website. You can find these in the blog released on the first Monday of each month. It is a chance to remind our readers about some of our older recipes that have not been in the spotlight for a while. I get to go first, and I chose our recipe for Beef Stew. It is rich and tasty and ideal for the frigid winter nights we have ahead of us. Here are some of the things that put Beef Stew at the top of my list.

  • It is easy to make. Whether you prepare it on the stove or in the slow cooker, it just needs a bit of chopping at the beginning and some time to cook and you’re in business.
  • It is a great recipe to make ahead. I make Beef Stew for ‘planned overs’ frequently. I will cook up a big batch, keep some in the fridge to eat in the next couple of days and freeze the rest in smaller bowls.
  • It is flexible. If you have parsnips instead of carrots or thyme instead of rosemary, give it a try! You may just find a combination your family loves. One of the adjustments I like to make to this recipe is serving it over mashed potatoes instead of putting potatoes in the stew.
