The weather is cooling off – so in comes soup season! Sometimes we see soup recipes that have many steps, including chopping lots of veggies. While sometimes I have time for this, other times I don’t. On my busy days, I need a soup that I can put together in a hurry. Soups are a great way to get creative, have nutritious meals, stretch food dollars, and reduce food waste, all while saving time in the kitchen.

As I thought about our theme of comfort food favorites, I struggled to pick just one thing. I even asked my mom what she thought I should write about. She would know, right? She suggested anything that involves mashed potatoes and she’s probably right on target there 🙂 . However, as I thought about it more, my go to foods when I’m feeling run down and just need a good meal are one-pot meals.
