Boost Your Produce Confidence
Have you ever skipped a recipe or passed on fresh fruits and vegetables because you weren’t sure how to choose or prepare them? You’re not alone! Fresh produce can feel intimidating if you’re unfamiliar with how to prepare it. When I first met my husband, I noticed he often had pre-cut fruits and vegetables in the fridge. While convenient, those pre-packaged items were expensive. I soon learned he was buying them simply because he didn’t know how to prep some of his favorite produce himself. With a little bit of guidance and practice, he was able to prep those produce items in his kitchen, saving quite a bit of money in his food budget. Giving New Life to Leftovers
I am a big fan of eating leftovers for lunch. I find that most dishes even taste better the second or third time after they have had a chance to marinate in the fridge. If you have been following Spend Smart. Eat Smart., you likely know that I am a fan of both pizza and tacos. I almost always have the ingredients for those dishes on hand, and I rarely get tired of eating them.
No Chopping, No Problem!
Last week I shared our April recipe of the month – Coleslaw Pasta Salad. It is a unique salad recipe because it does not have any chopping, so a knife is not needed. What’s for Dinner at the Gatewood Household?
This week it’s my turn to share what we’re having for dinner at my house! I’m a big fan of having dishes that include multiple food groups. That means I don’t have to think of or make many side dishes. Some recipes that are often in the rotation at our house include Quick Pad Thai, Beef and Vegetable Stir Fry, and Pasta Fagioli Soup. Since all of these have vegetables, protein, and grains, a side of fruit and maybe a glass of milk are the only other things I need to serve.
