This week I am continuing our summer series on salads with one I have not made in a while. As tomatoes begin to ripen in gardens and become available at the Farmers Market, this is a recipe we can add to our meal plan. One thing I really like about this recipe is that it has great leftover potential. You can both use up leftovers when making this recipe or create leftovers for meals later in the week. Either way, this is a win because no food gets wasted.
Here are some ideas for leftovers with Chicken BLT Salads:
- Cook extra chicken when you have the grill fired up. Store extra chicken in an airtight container in the refrigerator. Then use the chicken in these salads or for quick lunches over the next few days.
- Make all of the bacon in the package. Cooking bacon can be messy, so save yourself future messes by cooking it all at once. Cooked bacon can be stored in the refrigerator and reheated for breakfasts later in the week.
- Plan to use leftover lettuce and tomatoes in upcoming meals. They can be used for tacos, wraps, sandwiches, or other salads.
