Roasted Vegetables and Kielbasa

I hope you all had a wonderful Thanksgiving! If you’re anything like me, you probably have a bit of a mess in your refrigerator with bits of this and that leftover from holiday gatherings and meals. This month’s recipe is the perfect way to use what is left in your vegetable drawer to make a tasty meal.

Roasted Vegetables and Kielbasa is a simple sheet pan meal that is flexible based on what you have. Simply chop up your veggies (5 cups), slice your kielbasa, season and bake! Broccoli, cauliflower, carrots, onions, green beans, peppers, potatoes and squash all work great in this recipe. My favorite combination is yellow potatoes, broccoli and red onion. I often add paprika to my seasoning to ramp up that flavor that is already in most kielbasa.

If you have potatoes or sweet potatoes, they work great in this recipe. If you do not have any starchy vegetables, you can serve your Roasted Vegetables and Kielbasa over rice to add some grain and stretch the dish.
