Scrambled Egg Skillet

Justine often writes our recipe blogs because she is so heavily involved in developing recipes for our website. But this month I get to write the recipe blog because this recipe is one that I have loved for a long time. I hope you’ll indulge me and let me share the story of what inspired this recipe.

I was at the Iowa City farmers market many years ago and they had chefs do demonstrations from time to time. The chef demonstrating that day was a man named Kurt Friese who owned a lovely restaurant in town. You could tell he cooked from the heart. He was preparing what looked like a simple enough dish with sauteed bacon, potatoes and onions with eggs and seasonings added toward the end of cooking. He told us that at his house this dish was called ‘Diggity’ because when his children knew he was making it, they would yell, ‘hot diggity!’.

That recipe was the inspiration for what became our Scrambled Egg Skillet. We simplified it just a bit for home cooks and I hope you love it. This recipe is a delicious breakfast, but it is also a simple and satisfying dinner. Chef Friese has since passed away, but I hope you’ll make this and maybe just say ‘hot diggity!’ when you realize how good it is.
