What’s for Breakfast at the Gatewood’s?

Breakfast at our house it low key and includes lots of easy to prepare options. I don’t plan breakfast like I do our evening meal but I make sure there are a variety of options on hand for us to choose from. Some of our go-to items include pancakes, toast with peanut butter, smoothies, eggs, oatmeal, and muffins.

If you’ve read the blog for a while, you know my love of baking (and eating!) muffins. I like to make all kinds of muffins. I like to change it up once in a while though and bake something else. For breakfast, one of those things is Breakfast Cookies. We like oats, apples, and cheese so why not make them into a cookie! I know having cheese in a cookie might not sound good but I promise these cookies are tasty! You can make a batch and eat them for breakfast and snacks during the week. For breakfast, enjoy them with some eggs and a glass of milk.
