Our September recipe of the month is a Spend Smart. Eat Smart. favorite – Banana Oatmeal Bread. We have had this recipe on the website for many years, but it needed an update. Below are some highlights from the updated recipe. I hope you find some time to make it yourself because it really is a great recipe for any meal or snack.
Highlight #1: Alternate baking instructions. This recipe has the baking times for a loaf pan, a 9-inch by 13-inch pan, and a muffin pan. You can use the pan and baking time that is best for you.
Highlight #2: Fixed ingredient error. If you have a printed copy of our old Banana Oatmeal Bread recipe, please replace it with this update. The amounts for baking powder and baking soda were switched around. The bread will not rise properly if you follow the old ingredient list.
Highlight #3: Storage tip. This bread is moist, so it needs to be stored in a way that prevents mold. It is best to store this bread in the refrigerator or freezer.
