Selection
Choose potatoes that are firm and smooth with few eyes (dents). Avoid potatoes with sprouts, soft spots or a greenish color.
Storing
Store in a cool, dark, well ventilated place for use within 3-5 weeks.
Cleaning
Rinse potatoes under cool running water and scrub with a vegetable brush before eating.
Preparing
Preheat oven to 425°F. Prick potatoes twice with a fork. Place potatoes directly on the oven rack and bake about 1 hour or until potatoes are cooked through. Serve immediately or let cool, then refrigerate in a sealed container and use within 4 days.
