Ingredients
- 1 can (15 ounces) reduced sodium black beans or 2 cups cooked beans
- 1 can (15.25 ounces) corn
- 1 can (14.5 ounces) diced tomatoes
- Chili powder to taste
Instructions
- Heat a large saucepan over medium heat.
- Add black beans, corn, and tomatoes to the pan. Do not drain the liquid from the beans and vegetables.
- Add chili powder to taste.
- Cook and stir until heated through, about 12-15 minutes.
- Serve immediately.
Tips
Add chopped, cooked meat or chopped onions or green peppers. If using raw vegetables, simmer the soup for 10 minutes to soften the onion and pepper.
This recipe may be cooked in the microwave. Add the ingredients to a large, microwave safe bowl and cook until heated through, about 5-7 minutes, stirring halfway through.
