Selection
Choose firm, crisp stalks with as much white and light green regions as possible. Avoid leeks with yellow or withered tops.
Storing
Store in the refrigerator in a plastic bag up to 2 weeks.
Cleaning
Thoroughly wash with cold water to remove grit. Soil and grit may be between the layers of the leek. Separate the layers to clean thoroughly.
Preparing
Cut off the roots, the dark green tops, and any damaged outer layers.
Leeks may be eaten raw or cooked. Due to their similar flavor to onions, they may be used as an onion substitute in dishes.
