Ingredients
- 2 cans (14.5 ounces) diced tomatoes
- 1 can (15.5 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup water
- 2 cups frozen corn
- 1 onion, chopped (about 1 cup)
- 1 green bell pepper, chopped (about 1 cup)
- 1 tablespoon chili powder
Instructions
- Put all ingredients in a large saucepan. Cook over high heat until boiling.
- Reduce heat to medium-low. Simmer until onion and pepper are tender, stirring occasionally (15-20 minutes).
Tips
Top with shredded cheddar cheese.
Substitute chili beans for kidney beans.
This chili can be cooked in the slow cooker. Place all ingredients in the slow cooker, stir, cook on low for about 8 hours.
