Ingredients
- 3/4 cup brown sugar
- 1 can (15 ounces) pumpkin
- 1/2 cup oil (canola or vegetable)
- 2 eggs
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1 Tablespoon baking powder
- 1 3/4 cups white flour
Instructions
- Preheat oven to 375 degrees Fahrenheit. Line muffin pans with 18 liners or spray with nonstick cooking spray.
- Add brown sugar, pumpkin, and oil to a large mixing bowl. Whisk until combined.
- Add eggs. Whisk until combined.
- Stir in cinnamon and vanilla.
- Stir in baking powder and flour.
- Divide the batter into 18 muffins (about 1/4 cup each).
- Bake for 18-22 minutes or until a tester comes out clean.
Tips
Use 1 cup white flour and 3/4 cup whole wheat flour to add fiber.
These muffins can be frozen in an airtight container and thawed in the refrigerator or microwave.
Add 1/3 cup of chocolate chips.
