Ingredients

  • 3/4 cup brown sugar
  • 1 can (15 ounces) pumpkin
  • 1/2 cup oil (canola or vegetable)
  • 2 eggs
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 Tablespoon baking powder
  • 1 3/4 cups white flour

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Line muffin pans with 18 liners or spray with nonstick cooking spray.
  2. Add brown sugar, pumpkin, and oil to a large mixing bowl. Whisk until combined.
  3. Add eggs. Whisk until combined.
  4. Stir in cinnamon and vanilla.
  5. Stir in baking powder and flour.
  6. Divide the batter into 18 muffins (about 1/4 cup each).
  7. Bake for 18-22 minutes or until a tester comes out clean.

Tips

Use 1 cup white flour and 3/4 cup whole wheat flour to add fiber.

These muffins can be frozen in an airtight container and thawed in the refrigerator or microwave.

Add 1/3 cup of chocolate chips.
