Ingredients

  • 4 full graham cracker sheets
  • 2 Tablespoons butter, melted
  • 2 1/2 teaspoons sugar, divided
  • 1 bag (16 ounces) frozen berries
  • 1 teaspoon cornstarch

Instructions

  1. Preheat oven to 400° Fahrenheit. Line muffin pan with 6 liners.
  2. Crush graham crackers to make crumbs.
  3. In a small bowl, stir together graham cracker crumbs, melted butter, and 1 teaspoon of sugar.
  4. Put about 2 tablespoons of the graham cracker mixture into each muffin liner and press down gently with the back of the tablespoon.
  5. Bake the graham cracker crusts for 5 to 6 minutes or until lightly browned. Set aside to cool.
  6. While the crusts are baking, heat the berries in a medium saucepan over low heat. Stir occasionally until berries start to release some juice.
  7. In a small bowl, stir together remaining 1 1/2 teaspoons of sugar and cornstarch. Sprinkle over the berries and stir.
  8. Increase heat to medium and cook and stir until the mixture begins to bubble. Cook and stir 1 to 2 minutes more. Remove the heat and cool for about 10 minutes.
  9. Scoop 1/4 cup of berry mixture on top of each crust. Let cool completely.
  10. Cover and store leftovers in the refrigerator.

Tips

Serve mini berry pies topped with vanilla yogurt or whipped cream.

Four full graham cracker sheets is equal to 16 small graham cracker rectangles.

To make graham cracker crumbs, put crackers in a sealable plastic bag and crush with a rolling pin.
