Label Claims: What they Mean
Various labels and health claims cover food packaging these days. Some labels and health claims are regulated by the FDA, while others are simply advertising. Deciphering labels can be confusing and the laws and regulations behind them are even more confusing. After completing a course in Food Law this summer I thought I would try to simplify and clear up some confusion about “organic” versus “natural” labeled products.
Recipe Feature: Vegetable Soup with Kale and Lentils
I never heard of either kale or lentils when I was growing up. Recently, I’ve started enjoying both. Kale is being promoted as one of our most powerful vegetables. It is low in calories, but rich in vitamins C and K, fiber, and calcium. Lentils are very high in protein and they contain fiber, folate, vitamins and minerals. They come in a range of colors including yellow, red, green, brown and black. Lentils are easy for me, because they cook much faster than other dry beans.
Homemade Salad Dressing … Easy as 1, 2, 3
Homemade salad dressing adds wonderful flavor to salads of all kinds – lettuce, fruit, and pasta salads. You can even add dressing to roasted veggies to add extra flavor. The thing I like best about homemade salad dressing is that it can be made quickly and easily by keeping some basic ingredients in your pantry – vinegar and oil plus whatever add-ins taste great to you, such as herbs, spices, mustard, fruit juice, sugar, salt, pepper.
Are Valentine’s Day and National Heart Month Related?
I wonder if it is coincidence that Valentine’s Day, National Heart Month, and National Wear Red Day are all in February. Probably not, but it would be great if the hype around Valentine’s Day reminded us to eat heart healthy. Fruit Salsa, the new rage!
Americans love salsa. We eat more of it than ketchup these days. When I think of salsa I think of a tomato based sauce with hot peppers used as a dip. However, more and more salsas are using fruit as the main ingredient. With warm weather coming soon (thank goodness) many fruits will be in season so they will be abundant and lower in cost.
I remember when we were kids we made our own popsicles in the summer time using a flavored drink mix like Kool-Aid. We had an ice pop mold that we used. Since we were making them out of sugary water they were very hard (basically ice on a stick) and they didn’t provide many nutrients.
Featured Recipe: Tzatziki with Pita Chips
Last month I went to a nice restaurant with my sisters and friends before a play. I ordered a Greek Salad plate. It was delicious, but as I looked at it I thought, “I could make this so easily at home”. The salad was a combination of romaine and other lettuces, cherry tomatoes, Kalamata olives, red onion, and feta cheese with some pita bread on the side. The dressing looked and tasted just like our Tzatziki recipe which is so simple and inexpensive to make. Just remember, the flavors in the Tzatziki only get better if you make it the day before you plan to use it. It keeps for 4 days in the refrigerator.

Slow Cooker Pork Chili
We would like to start 2015 off with a new chili recipe for you. If you are like me, you have your own special way of making chili and you do not want to make any changes. When I first saw this recipe, I agreed to try it, but at the same time I told myself that I would make this new chili only once and then I would go back to my usual recipe. I was wrong! Since first trying Slow Cooker Pork Chili over a year ago, I have made my old recipe only once.
