Mini Berry Pie

One of my family’s favorite foods is berries. I can set a bowl filled with berries on the table and in the next instant they are gone. This time of year, we do not have access to the fresh berries they love, so I often buy frozen berries at the grocery store.

Broccoli Salad

Broccoli Salad

This time of year I know that I need to eat fewer treats and a lot more vegetables. I have a sweet tooth plus pregnancy cravings for chocolate, so it takes a lot of willpower for me to avoid the dessert table at holiday meals and parties. I can easily fill up on sweets so that I am not hungry for the nutritious foods that my baby and I need. One solution to my problem is our recipe of the month for December, Broccoli Salad.

Cooking with Venison

It is hunting season, so venison is a source of protein that is both inexpensive and easy to find.  Unfortunately, many people do not know how to cook with venison, so it goes to waste.   Venison is similar in structure and taste to beef and pork, so it can be substituted for beef or pork in most recipes.  If you have it, try one of our Spend Smart.Eat Smart. recipes (Skillet Lasagna or Meatloaf) with ground venison instead of ground beef.

Our Favorite Chicken Noodle Soup

Our Favorite Chicken Noodle Soup

Chicken noodle soup is a go to meal for me when anyone in my family is not feeling well. I make it often in the fall, winter, and spring and even occasionally in the summer. Our January recipe of the month is Our Favorite Chicken Noodle Soup – a great soup for cold and flu season.

A Healthier Me in 2016: Water

This month on Spend Smart. Eat Smart. we have been talking about setting goals in the new year.  To be completely honest, setting goals is really hard for me right now with a new baby at home.  But, in the spirit of the new year, I am going to set a public goal and you can all hold me accountable for sticking with it.

Stuffed Pepper

Stuffed Peppers

It is time for a confession. Until we started testing this new recipe for stuffed peppers, I had never made a vegetable stuffed with anything. It always seemed too fancy to me and it looked like a lot of work. After testing this recipe quite a few times, I realized that it is not a lot of work to make stuffed peppers, it is actually pretty easy. It also tastes great and looks really nice, so maybe I was right on the fancy part.

Fish Sandwich

Fish Sandwich

My husband gets excited this time of year for fish sandwiches. He loves that he can get a deal on fish sandwiches at one of his favorite fast food restaurants. A few years ago, I decided to try to make a homemade fish sandwich that would be heathier, less expensive, and tastier than his fast food favorite.

Pineapple Snack Cakes

Pineapple Snack Cakes

At the grocery store where I shop, they often have canned pineapple on special. It is usually a great deal on a great tasting and nutritious fruit. My family loves canned pineapple as a side dish for any meal, so I buy it often. My husband and son even like to drain the juice off and save it to drink later. Our April recipe is a new way to use canned pineapple – as a snack cake.

Lentil Tacos

Lentil Tacos

Tacos are a go to meal for my family. They make the menu almost every week. Our May recipe is a delicious way to change up the typical taco routine. In our lentil taco recipe, lentils are used in place of meat or fish because they are quick and easy to cook and they are inexpensive.

glass jars of beans

Beans, Beans, Beans

Zesty Whole Grain Salad

A student shared the inspiration for this recipe with me, and, once I tasted it, I was hooked. I ate it for lunch nearly every day for weeks.

Meal Makeovers with Whole Grains

I did not grow up eating a lot of whole grains. Actually, I did not truly know what a whole grain was until I was an adult. Last week, our intern guest blogger wrote about how to find out if a food is whole grain or not. This week, I would like to share with you how I have replaced refined grains with whole grains in my menu.
