Last week on the blog Jody gave us a great intro into why we need fiber and what foods have fiber in them. For the rest of the month, we are each going to share some practical ways we try to get fiber. My family loves muffins, in fact, I think muffins might be my husband’s favorite food. We eat them for any meal, for snacks, and when we need a sweet treat. Since they are a regular part of our menu plan, I try to choose muffins that will get us some fiber.
Muffins with Oatmeal
Oatmeal on its own is a high fiber food, but my children are not interested in eating oatmeal by itself. So, I add it to our muffins. Chocolate Chip Oatmeal Muffins are their all-time favorite. But they also like our Banana Oatmeal Bread baked as muffins instead of in a bread pan.
Muffins with Whole Wheat Flour
When baking muffins, I almost always swap out half of the all-purpose flour and replace it with whole wheat flour. Our Lemon Chia Seed Muffins already have this swap written into the recipe. As an added bonus, they are made with chia seeds, which also have fiber. If you are looking for a fiber boost, add 1-2 tablespoons of chia seeds to any muffin batter.
Muffins with Fruits or Vegetables
We all know that eating our fruits and veggies is a way to get all kinds of nutrients, including fiber. Sometimes it is just more fun to get your fruits and veggies in a baked snack. Try out our Pumpkin Muffins, Pineapple Snack Cakes, or Chocolate Chip Zucchini Muffins. You can also try the Chocolate Chip Oatmeal Muffins with blueberries or raspberries instead of chocolate chips.
