For our last week of ideas on making snacks into meals, I am sharing one of my favorite lunches. We love crackers and cheese for a quick and easy meal at our house. I often keep bricks of cheddar, pepper jack, and Swiss cheese in our refrigerator so we can cut them up for a meal when we do not feel like cooking or when we are running low on time.
A few years ago, I had some leftover guacamole and it completely changed my crackers and cheese game. Now, I spread guacamole on my crackers and then top them with a piece of cheese. Not only does this add spice and flavor, it also adds the nutrition from avocadoes: fiber, monounsaturated fat, vitamins, and minerals. For me, this is a win-win.
