Turning “Mixed” Eggs into a Meal

School’s out, and the transition to summer break is underway! Using snack foods as a meal is one way my family eases into summer. Over the past few weeks our team has been sharing their favorite snack foods that can double as meals. Any meal that is quick, filling and low effort to allow us more outside time is a win!

One family favorite at my house is Deviled Eggs, or as my preschooler likes to call them, “mixed” eggs. Eggs are a great source of protein and are packed with nutrients like choline (great for brain health) and vitamin A (important for eye health). Each week I hard-cook a dozen eggs to keep in the fridge for a healthy snack, quick lunch or an easy dinner addition. Check out Jody’s blog from May 4, 2026, for tips to hard-cook eggs at home.

The best part about Deviled Eggs is how flexible the recipe is. You can mix and match ingredients based on what you already have in your kitchen. Some of my favorite toppings include cooked bacon, diced avocado or tomatoes, leftover cooked salmon or even a sprinkle of cheese. My youngest prefers her “mixed” eggs without relish, and my oldest enjoys hers with a little less mustard. You can’t go wrong with whatever mix-ins and toppings you choose!

To really make it fun, set up a “deviled eggs bar” and let everyone create their own! Pair your deviled eggs with salad greens, cut up veggies and fruit, and whole wheat toast or crackers for a simple, satisfying, and nutritious meal.
