No-Cook Meals: Hummus to the Rescue

Last week Christine shared on the blog that she likes to use cottage cheese in her meals when she doesn’t feel like cooking. Today I’m going to share with you another idea for turning a snack food into a meal. Hummus is a hit in our house. Hummus is made from garbanzo beans, also known as chickpeas. Garbanzo beans are a good source of fiber and protein, two important nutrients to include in meals.

We like to eat hummus with naan bread, crackers, and fresh veggies. To round out the meal, I’ll add some fruit and a glass of milk. Besides making a quick lunch or supper, my daughter also likes to eat hummus and naan bread for breakfast. The fun thing about hummus is that you can get different flavors. Our top picks are garlic or roasted red pepper hummus. If you’d like to make your own, try our Hummus recipe.

Another way to use hummus is in a wrap. I enjoy making our Zucchini Hummus Wrap in the summer when zucchini is available. This requires cooking the zucchini so it does take a little prep work. It’s a great way to use up garden produce in the summer.
