This month our blogs are all about making a meal out of your favorite snacks. Whether you enjoy cooking or not, sometimes you just do not want to spend time in the kitchen preparing a meal. Turning snacks into dinner allows you to have a tasty and nutritious meal for minimal effort.
At Spend Smart. Eat Smart. we are big believers in the idea that food does not need to be complicated. Choose a source of protein, a carbohydrate, and then add in some color and fiber with fruits and vegetables and mix in some calcium-rich foods throughout the day.
Cottage cheese is one of my favorite no-cook meal components. It gives me protein and calcium and is a delicious base for toppings. I can top it with whatever chopped vegetables and seasonings I have. Carrots, tomatoes, cucumbers and radishes are all great with cottage cheese. I eat this cottage cheese bowl with some crackers or tortilla chips and a piece of fruit. I love that this takes just a few minutes to put together, packs up well and gives me a lot of the nutrition I need.
