One of my favorite things to do in the summer is go on an adventure with my children. These adventures are usually not fancy. Checking out a local city, county, or state park tops our list. Over the years, I have become pretty good at packing for these spur of the moment trips. Packing a picnic version of a snack board makes a lunch where everyone can find something they like.
A snack board does not have to be a board or a tray. I have learned which containers from my kitchen work perfectly for a snack board on the go.
- A plastic bowl with a tightly sealing lid protects fresh fruit like grapes, strawberries, and cherries.
- A small rectangular container fits cheese I slice into small squares. I just have to remember to grab a box of crackers too.
- A medium rectangular container fits sliced vegetables like cucumbers, carrots, celery, and peppers.
- A cute bento box holds sweet treats. Some Spend Smart. Eat Smart. favorites are Energy Bites, Peanut Butter Balls, and Peanut Butter Banana Oat Bites.
- A lunch bag carries any pre-packaged snacks we have on hand. My children love applesauce pouches, granola bars, fruit snacks, and crackers.
I lay everything out on a picnic table or a clean towel in the back of my van and we all eat out of the containers or off paper towels. Even though these are not fancy snack boards, they do offer three benefits that are important to me:
- I save money using the food I have on hand at home instead of stopping at a restaurant or convenience store.
- I can cater to the tastes of my family by including foods that each person likes.
- No one gets cranky because they have not had anything to eat.
