Hard-Cooked Eggs

This month I’m sharing with you a recipe that is a bit unique. It’s our recipe for Hard-Cooked Eggs. Most people call them hard boiled eggs, but when I started working with Spend Smart. Eat Smart. I learned about this recipe and that eggs shouldn’t be hard boiled. To hard-cook eggs, the water comes to a full boil, but then the pan is removed from the heat and the lid kept on. The eggs continue to cook gently in the hot water. This method produces tender eggs. It also reduces cracking and the green color that can form around yolks when eggs are hard boiled.

Two of my nephews have chickens on their farms so I often get my eggs from them. It’s fun using something they have raised in my cooking. I like to make hard-cooked eggs to eat for breakfast or as a snack. My daughter really likes to use them in Tuna Egg Salad. To make this, she mixes a can of drained tuna with a couple of chopped hard-cooked eggs and a bit of mayonnaise. She likes to eat it on bread or with a spoon.

Eggs are an inexpensive source of protein so consider cooking a few to have in your refrigerator for a quick snack or as part of a meal.
