Recently I wrote about the benefits of processed food. One type of processed food that can help with meal planning and stretching the food budget is frozen food. For the next four weeks Katy, Christine, Justine and I are going to share with you some of the foods you can find in our freezers and how we include them in our meal planning.
Three foods you will consistently find in my freezer are whole wheat waffles, peas and mixed vegetables.
The waffles are a go-to breakfast for my 16-year-old son. He’s up early to go lift weights for football before school and fueling up before he heads out the door is important. We’ve found a brand of frozen whole wheat waffles that he likes to toast and enjoy with peanut butter.
Frozen vegetables are another staple in my house. They are inexpensive and I can keep them on hand to use in a recipe or as a side dish. And I don’t have to spend time cutting them up! My daughter’s favorite vegetable is peas, so I keep them on hand to heat up and use as a quick side dish. I also like to keep mixed vegetables in my freezer to use in Vegetable Fried Rice and Quick Pad Thai.
