When winter hits and temperatures drop, I crave dishes that bring warmth and comfort. For me, that means hot soups and stews in a bowl to wrap my hands around. But by January, my family is ready for something different. Thai Chicken Curry is a great alternative to soup at my house. I still get that warm, comforting meal in a bowl, yet it is different enough from traditional soup to keep everyone in my family happy.
One of my favorite parts of this dish is its versatility. The original recipe uses chicken with onions and carrots, but I’ve swapped in pre-cooked frozen shrimp and a variety of veggies, like green peas, broccoli, and bell peppers. I personally enjoy spicier curry dishes, so I add a sprinkle of red pepper flakes to my bowl for some extra heat. I tend to add this recipe into my meal rotations when I know I may have leftover rice or veggies. Eliminating a step by using leftovers makes this dish even simpler- that is always a win at my house!
