Soup-er Birthday

Autumn soup

My birthday is later this week, so I want to celebrate with you all by sharing three recipes this month! Soup recipes are my favorites to make and eat. I love making soups because they are flexible and I can usually put a soup together with ingredients I have on hand. I love eating soup because of the warm feeling it gives me. Below are my top three Spend Smart. Eat Smart. soup recipes.

Chicken and Rice Soup: This recipe is great for feeding a crowd. First, because it is a slow cooker recipe, which makes it easy to prepare and take along to any gathering. Second, because it is hearty. The chicken, wild rice, and vegetables together are filling.

Pasta Fagioli Soup: This recipe is a Hoover Family favorite that is quick to put together. My family devours this soup every time I make it. I think they would all recommend serving it with a side of corn bread or garlic bread.

Autumn Soup: This one is just for me because my family is not big on squash. I like to make it for myself early in the week and then warm the leftovers up for lunches the rest of the week. I have learned that frozen squash works just as well as fresh squash for this recipe, plus it saves time.

Try one of my favorite soup recipes this month and let me know what you think. Enjoy!
