Refreshing Summer Salsa

Now that school is out for the summer, my kids are constantly reaching for snacks during the day. My grocery list has grown quite long over the past several weeks! To stay on top of my grocery budget, I have been trying to buy less pre-packaged snack foods and opt for items that have more fiber and nutrients to keep my kids full while waiting for our next meal.

Tortilla chips are always on my grocery list- my oldest daughter and I could snack on them all day! Although we love tortilla chips, they aren’t the most filling. During the summer, our neighborhood online page often has extra produce available for those who don’t have gardens. Tomatoes are always in abundance, so choosing a snack option with tomatoes as the star was at the top of my list! For more of a balanced snack, I started making Salsa Fresca to keep in the fridge throughout the week. Our tummies stay full longer, we are eating extra veggies, and my daughter and I get to eat our favorite chips throughout the day!

This refreshing salsa is made with only a few ingredients, making it low-cost and easy to make. Simply chop up a few tomatoes, onion, pepper (I like jalapenos or green peppers), and add garlic, salt/pepper, and lime juice. It’s great as a snack or as a topping for tacos- give it a try this week!
