This month we are sharing food mashups. These are ideas for using foods or recipes in unexpected ways. You will hear about a mashup from each of the Spend Smart. Eat Smart. bloggers through the month of June! Have you tried our delicious Slow Cooker Pork Roast? This is one of my favorite recipes on our website. It is rich and tasty and has bright citrus flavors that are somewhat unexpected in a pork recipe.
My go-to way to serve this is as a burrito bowl with rice, beans, peppers and avocado. However, this is not the only way to use this recipe. It is also delicious as a sandwich served in a similar way to traditional pulled pork. You could top your pork sandwich with shredded cabbage or coleslaw to add some crunch. A bit of Guacamole on the bun is delicious too!
The Slow Cooker Pork Roast recipe is flexible based on how large your pork roast is. Consider making a large one and using some of the pork for burrito bowls or tacos and saving some back for sandwiches next week. I hope you enjoy this recipe and have fun getting creative with it.
