
Nine years ago, when my son was six and my daughter was two, my co-worker and friend Katy Moscoso came over to watch my kids. I made the Spend Smart. Eat Smart. Chicken Alfredo Pasta recipe ahead of time for them to have for supper. I had made the recipe before, and my daughter liked it. I knew it wasn’t Parker’s favorite, but I figured he might eat some of the pasta. Later that evening, when I returned, guess what Parker told me, “Mom, Katy made this really good pasta, and I loved it!” It turns out he had more than one helping of it. That little stinker didn’t know that I had made the pasta ahead of time, so he thought Katy had made it and therefore thought it was delicious!
I still make Chicken Alfredo Pasta, and my daughter still really likes it. It’s back to not being Parker’s favorite, I guess, because Katy’s not making it. I like this recipe because it’s simple and it includes three food groups (protein, grains, and vegetables), so I don’t have to think of multiple dishes to make. I usually serve it with fruit and a glass of milk, and the meal is complete. The recipe calls for broccoli, but you can use other vegetables depending on what you like. To make it even easier, when I buy chicken breasts, I cut some up into bite-sized pieces and freeze them in plastic bags. Then, when a recipe calls for cut-up chicken breast, I just thaw out a bag and it’s ready to cook.
