This month I am excited to bring some attention to an old favorite recipe and offer an idea for how you might try it a different way. Sloppy Joes have been around for a long time and most people have a favorite version of them. My favorite is the version on our website. This recipe tastes more like ketchup and mustard than it does like barbeque sauce or tomato sauce – it’s delicious!
My current favorite way to eat this recipe is as a bowl instead of a sandwich. You prepare the meat mixture just as the recipe says, but you use it as topping for roasted potatoes rather than a sandwich filling. Here are the steps!
- Preheat your oven to 425 degrees.
- Chop some small yellow or red potatoes allowing 2/3 cup of potatoes per person.
- Toss the potatoes with some oil and your favorite seasonings.
- Spread them on a pan and bake for 20-25 minutes.
- While the potatoes bake, you can prep the meat mixture.
- When everything is finished, place some potatoes in a bowl and top with the Sloppy Joe filling and some chopped pickles.
