Pasta is a fan favorite at our house. I love the flexibility of pasta and how I can use a variety of sauces, cheeses, noodles, and even protein. Thankfully our daughters enjoy pasta, so some form of a pasta dish ends up on our meal plan at least 1-2 times a week. To switch it up, I love using the Stuffed Peppers recipe on Spend Smart. Eat Smart. This recipe provides the same flavors as our favorite pasta dishes, but with a fun twist!
Here are a few of the reasons why we enjoy making Stuffed Peppers at our house:
- Cost friendly– In our area, peppers are a vegetable that we can find all year round at any of the local grocery stores. They are usually a good price when I purchase them in bulk (less than a dollar per pepper), making this recipe simple, tasty, and cost friendly for my family.
- Versatile– We have made this recipe with ground turkey, beef, pork and sausage. Whatever protein is on sale that week is usually what makes it into my stuffed peppers mix.
- Easy to make in advance– One of the tips for this recipe is to make the filling in advance to freeze for future use. I also like to make a double batch of the mix, use half for the peppers, and the remainder for quick lunches.
- Swaps out noodles– Although my family loves noodles, it’s nice to have an alternative. Using a pepper in place of the noodles increases the vegetables we eat at home providing even more fiber and vitamins into our meal. The recipe calls for green or red peppers, but orange and yellow peppers are great to use, too!
