Recipe of the Month- Lentil Tacos

This month I’d like to highlight our recipe for Lentil Tacos. Tacos are a go-to meal in our house and occasionally I like to make Lentil Tacos.

Here are some things I like about lentils:

  1. They are high in fiber and protein. One cup of cooked lentils offers about 16 grams of fiber. Fiber helps reduce cholesterol levels and may lower your risk of heart disease.
  2. Since lentils are smaller, they cook more quickly than dried beans and they do not have to be soaked before cooking. For this recipe, the lentils need to cook for about 30-35 minutes.
  3. They are a low-cost protein source. At my local grocery store a 16-ounce bag costs $2.69. This will make about 6 cups of cooked lentils.

The recipe calls for using ½ package of 40% less sodium taco seasoning. Another option would be to use our Taco Seasoning Mix which would be even lower in sodium but still provide good flavor. And if you like to fix it and forget it, try our Slow Cooker Lentils. These can also be used in tacos but are cooked for 4 hours in the slow cooker.
